Cherry Drying Process
Cherry is a famous seasonal fruit with bright color and beautiful crystal. The fruit is rich in sugar, protein, vitamins, calcium, iron, phosphorus, potassium and other elements. Our air-energy heat pump oven dryer can dry cherry well and keep its nutritional and practical value intact. Before drying, it needs to be washed and cored.
1. Washing and Soaking
The harvested cherries are put into our cherry washing machine to wash away the dirt and dust on the surface so as to ensure the washliness and health of the dried cherries. And then in order to shorten the drying time, cherries can be blanched in 0.2-0.3% boiling alkali solution for a short time. After blanching, cherries can be rinsed in clear water to remove alkali solution.
Before drying, cherries need remove cores, after washing, put cherries into our pitting machine and turn on the machine, and fruits are pressed and remove cores along the rollers, and cut them for 2 or 4 petals, which can be achieved according to the needs of customers.
The material is evenly placed on the drying tray to avoid affecting the ventilation and dehumidification. When the drying process is about 60 ℃, the temperature is raised to 75-80 ℃. After 8-12 hours, the undried fruit is picked out and dried again on another baking tray. The moisture content is below 18%. After drying, the fruit is in a suitable soft state to achieve the balance of internal and external moisture. Dried cherries are poured into cartons and softened for 2 to 3 days.
