Pistachio Drying Process

Screening for removal of impurities in the process of shelling, selecting the flat nucleolus with yellowish seed coat, white seed kernel, full shape, uniform size and compact texture.

2.Decolorizing and Washing

The kernels were soaked in 4% citric acid decolorizing solution with twice the weight of raw material for 4 to 5 minutes, or in 0.5% to 11.0% sodium bisulfite decolorizing solution for 25 to 30 minutes. After decolorizing, washing 2-3 times with clean water immediately, then soak in clean water for 5-10 minutes.


The material is pushed into the drying room when the temperature rises to 60℃-70℃. The stage-heating method is generally used when the pistachio is drying, and then the temperature rises at 100℃ and 120℃ for 18 minutes respectively. The temperature is controlled at 130℃-140℃, finally, the material is dried for 10-25 minutes, then cooled rapidly, and the drying is completed when the moisture content is about 7%.
