Chili Pepper Drying Process and Precautions

The main production areas of dried chili peppers are most of Sichuan, all of Guizhou, all of Yunnan, all of Hunan, and Henan. Eating chili peppers can increase appetite, aid digestion, and have medicinal properties. Chili peppers can also be used to extract capsanthin, which is used in the food and cosmetics industries. With increasingly stringent environmental regulations in my country, the use of steam boilers to process dried chili peppers has gradually been phased out. This article introduces a chili pepper dryer based on air-energy heat pump technology.

The drying time for dried chili peppers is generally around 18 hours (some peppers require a second drying cycle, requiring additional drying time). The peppers soften and swell noticeably during the drying process. Staged drying allows the chili oil to penetrate the surface, resulting in a uniform, rosy, and smooth color. It also helps to balance the moisture content of the peppers. Using a chili pepper dryer, the average cost per pound of dried chili peppers is 0.2 yuan (based on 0.7 yuan per kilowatt-hour).

The stacking thickness of peppers: The stacking thickness of peppers should be uniform, generally 20 to 30 cm is appropriate. If the stacking is too thin, the air permeability is good and the wind resistance is small. Although it is conducive to heat exchange, the contact time between hot air and peppers is relatively shortened, and the heat utilization rate is low. If the stacking is too thick, the resistance increases too much, the hot air cannot penetrate the material layer, and the drying effect is poor.
