It primarily matures in summer and autumn, making it a seasonal fruit. However, bitter melon is difficult to store and easily spoils. Processing it into slices preserves its original flavor. Dried bitter melon can be enjoyed not only as a drink but also in soups, stir-fries, and salads. Therefore, sun-drying bitter melon to preserve its long-term freshness has become a popular choice.

They are particularly poised to replace traditional dryers in drying applications, meeting a wide range of drying needs, from fruits and vegetables to seafood, Chinese medicinal herbs, and industrial products. 1. Slice the pest-free, cleaned bitter melon into thin slices approximately 3 cm thick. This thickness promotes even drying. If the slices are too thin, they will become thin and brittle during drying, making them difficult to store.

2. Bitter melons should be dried at a medium-high temperature, not too low or too high. A temperature between 45°C and 65°C is ideal. The initial moisture content of bitter melon is approximately 90%, and the moisture content of the dried bitter melon slices is approximately 13%.

3. Continuous dehumidification is required during the drying process to ensure a natural green color. The dried bitter melon slices should retain a natural green color and have good rehydration properties.
